The Aurelio Settimo winery produces only DOC and DOCG red wines, made exclusively from its own grapes, maintaining and respecting a traditional line: for Barolo quite long macerations, ageing in oak barrels with a capacity which varies from 2500 to 3500 litres. For Dolcetto d’Alba and Langhe Nebbiolo wines the macerations are shorter, with frequent pumping over and puncing down.
